Somen are very thin, white Japanese noodles made of wheat flour. The noodles are usually served cold. The difference between somen and the thicker udon noodle is that somen is stretched while udon are cut. Somen noodles are served cold and used to dip into broth or a sauce, not poured over like other noodles. Somen is served hot, but usually only in the winter time in hot soup.
